Aloo Gobi (Cauliflower and Potatoes)

Ingredients

  • Butter - 1 tablespoon
  • Cumin Seeds - 1 teaspoon
  • Onion - finely chopped
  • Garlic - 4 cloves finely chopped
  • Ginger - 1 inch finely chopped
  • Salt & Cayenne Pepper - As per taste
  • Turmeric - 1 teaspoon
  • Cumin Powder - 1 teaspoon
  • Cauliflower - 1 head cubed
  • Russell Potato - 1 potato cubed half inch

AlooGobi

Take the first 7 ingredients in the list above and heat them for 4 minutes on medium-low in a nonstick pan. Then add the cauliflower and potato cubes and cook them on high heat with the pan covered. Let all the water evaporate from the veggies for about 2 minutes. Then turn down the heat to medium-low and cook them until completely cooked for 15 – 20 minutes depending on the size of the veggies. Top off with cumin power and chopped cilantro and enjoy with or without rice.
