Moong Dal (Green Lentil Soup)

Although Moong Dal/Green Lentils are not allowed in Specific Carbohydrate Diet (SCD), I have fortunately been able to eat all kinds of beans and lentils. Try to soak the lentils in water overnight before proceeding with this recipe to shorten the cooking time.
Ingredients
- Lentils - 1 cup dried
- Water - 4 cups
- Coriander Powder - 1 tsp
- Tumeric Powder - 1 tsp
- Cayenne Pepper to taste
- Salt to taste
Method
Step 1
Rinse the lentils a couple of times and discard the water.
Step 2
Add 4 cups of water and the rest of the ingredients to a pot. Cover the pot and let the water boil.
Step 3
Once the water starts boiling uncover the pot slightly. Let it continue cooking for about an hour, frequently checking and adding water if necessary.
Step 4
Cook until the lentils and spices have mixed together. At this point you can add some butter and enjoy the Dal (Lentil Soup) or continue to next step.
Step 5
Add a tablespoon of butter to a frying pan along with some cumin seed, chopped 4 to 5 cloves of garlic and half an onion diced. Saute it until the onions are golden brown.
Step 6
Add the sauteed onions to the lentils and top it with some cilantro. Dal (Lentil Soup) can be enjoyed as is or with some white/brown rice.
