Tomato Sauce

Tomato Sauce is a base used in many recipes. If you are following SCD, cooking SCD meals can get challenging. Although this sauce is very time consuming but once prepared it can help with a lot of SCD dishes. I’ll be posting various recipes regularly with this sauce so keep this recipe handy.
Ingredients
- 2 lbs Tomatoes
- 2 Onions
- 10-14 cloves of Garlic
- 3-4 tbsp Olive Oil or Butter
- 1 tbsp Cumin Seeds
Method
Step 1
Chop the onions and garlic.
Step 2
Add olive oil/butter, cumin seeds and garlic to a big frying pan and place the pan over medium high heat.
Step 3
Add onions to the pan and cover the pan with a lid.
Step 4
Let the onions sweat for 5 minutes on medium high heat while stirring them every minute or two. After 5 minutes, turn down the heat to medium low and let the onions cook till they are golden brown.
Step 5
Place all the tomatoes in a Vitamix or similar blender and blend them to a thick but smooth consistency.
Step 6
Pour the blended tomato paste into the frying pan with the sauteed onions and stir the mixture. Turn up the heat to medium high and let it come to boil.
Step 7
Once the edges start to get bubbly turn down the heat to medium low. Continue cooking until all the water dries out.
Step 8
Let the Sauce cool down and store it in a jar.
