Veggie Pasta

Ingredients

  • Olive oil - 1 tablespoon
  • Fresh Oregano - 2 tablespoon finely chopped
  • San Marzano Tomato Sauce - 3 tablespoon
  • Garlic - 2 cloves finely chopped
  • Shallot - 1 finely chopped
  • Salt & Crushed Red Pepper - As per taste
  • Zucchini - 1 chopped into half inch cubes
  • Goat cheese - 4 tablespoon
  • Cooked Pasta - 1 cup
  • Parsley - 3 tablespoon finely chopped

VegPasta

In a nonstick pan cook the first 6 ingredients for 3-4 minutes. Then add the zucchini until cooked through and then add the pasta. Mix everything together and top the pasta with goat cheese (do not mix goat cheese into the pasta).  Sprinkle the parsley on the pasta and enjoy!
