Lentil Salad
2013-07-14This Lentil Salad recipe can be prepared as a Specific Carbohydrate Diet by skipping the corn on cob.
Ingredients
- Black or Green Lentils - 1/3 cup
- Corn on cob
- Peach - 1
- Lemon Juice - 1 tsp
- Lime Juice - 1 tsp
- Red Onion - 1/2
- Salt to taste
Method
Step 1
Cook the lentils for about 25 minutes.
Step 2
Grill the corn, peach and onion.
Step 3
Chop the corn, peach, onion and mix with the lentils.
Step 4
Mix olive oil, lemon juice, lime juice, salt and pepper in a separate bowl.
Step 5
Pour the olive oil mixture over the lentils and the salad is ready to be enjoyed!
